For each oil, we calculate the temperature margin: (Olive Oil Smoke Point) – (Target Cooking Temperature). Oils with a smoke point more than 25°F (14°C) above the target are marked Safe, as they have a buffer to prevent accidental overheating. Oils with a smoke point within 25°F (14°C) of the target are marked Borderline, meaning you must monitor heat closely. Oils with a smoke point below the target are marked Unsafe, as they will burn at your cooking temperature.
All smoke point values are based on standard industry averages for unrefined, virgin, and refined olive oil varieties. Temperature conversions use the standard formula: °F = (°C × 9/5) + 32, °C = (°F – 32) × 5/9.
